SIMPLE PLEASURE (ЕДА)
warm olive oil in pan, over medium heat. season salmon with salt & w/peper , both side. (skined side up)put inside pan and cook about4 min. until it's slightly browned.
to serve: arrange the fillet on warmed pater & drizzle souce on each piece. bon appetite! |
SALMON WITH RED WINE
- 2 tea spoon extra virgin olive oil , - 2 tea spoon minced shallots - 1/2 tea spoon cracked black paper, - 1/4 cup balsamic vinegar - 2 cups red wine, - 2 table spoon heavy cream - 4 table spoon unsulted butter, - freshly ground white peper - coarse salt, - 4 skinless salmon fillets. heat 1-2 teaspoon olive oil in deep pan. add shallots & black paper, saute for 4 min. add vinegar & wine, rise heat to hi-hi. bring it to boil & let reduce until just a few teaspoons remain. 10 min. take away pan from heat and whisk into cream. then whisk in butter. pour sauce thru fine mesh, remove solids, season sause with w/pepper & set aside....keep warm |
APPLE - CHEESE - COLE SLAW SALAD
3 tart apples 4 c. shredded cabbage 1/4 lb. processed Swiss cheese 2/3 c. salad dressing 1 tsp. salt Few grains of cayenne 8 stuffed olives, sliced Peel and cube apples; combine with cabbage. Cut cheese in long, narrow strips; add with salad dressing, salt and cayenne to apple mixture. Serve in individual salad bowls. Кисло-сладкое мясо "Хупа"
Мясо 1,5 кг, 100 г томатного пюре, 3-4 луковицы, 6-8 зубчиков чеснока, картофель, 500 г чернослива, 1 стакан бульона, 1 ст.л. меда, 3 ст.л. имбиря, 3 ч.л. уксуса, сахар по вкусу, душистый перец, 4 ст.л. коньяка, лавровый лист. Разрезать мясо на небольшие куски, посолить, обжарить в постном масле, положить в сотейник, залить бульоном и поставить тушить. Сварить 5 картофелин, каждую картофелину разрезать на 4 части. На постном масле обжарить нарезанные лук, чеснок, имбирь, добавить сахар, уксус, томатную пасту, мед, подержать на огне 2 минуты, добавить коньяк, размешать и снять с огня. К тушеному в течение 45 минут мясу добавить эту смесь, картофель, чернослив, черный перец, лавровый лист и тушить в духовке под крышкой до готовности. |
CHERRY TOMATOES AND FETA CHEESE SALAD.
1 box of cherry tomatoes,halved. 3 scallions,chopped. 300-400 gm of feta cheese [french feta or other hard feta] 3-4 Tbs of sour cream. pinch of salt. In a bowl mix halved tomatoes and chopped scallions,add salt and small chunks of feta cheese,add sour cream,carefully mix and enjoy! (pl) |

1/4 cup white wine vinegar 1 orange tomato, cubed 1/2 red onion, diced salt to taste 16 pods fresh okra DIRECTIONS Preheat an outdoor grill for medium-high heat, and lightly oil grate. Combine the vinegar, tomato, onion, and salt in a bowl; set aside. Cook the okra on the preheated grill until a few black areas have developed on its skin, about 5 minutes. Method
1 Put potatoes into a saucepan. Add 1/2 teaspoon salt. Add water until potatoes are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done - a fork can easily be poked through them. 2 Warm cream and melt butter, together, either in microwave or in a pan on the stove. Drain water from potatoes. Put hot potatoes into a bowl. Add cream and melted butter. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding milk to achieve the consistency you desire. (Do not over-beat or your potatoes will get gluey.) Salt and pepper to taste |
