SALMON WITH RED WINE

- 2 tea spoon extra virgin olive oil , - 2 tea spoon minced shallots
- 1/2 tea spoon cracked black paper, - 1/4 cup balsamic vinegar
- 2 cups red wine, - 2 table spoon heavy cream
- 4 table spoon unsulted butter, - freshly ground white peper
- coarse salt, - 4 skinless salmon fillets.
heat 1-2 teaspoon olive oil in deep pan. add shallots & black paper, saute for 4 min.

add vinegar & wine, rise heat to hi-hi. bring it to boil & let reduce until just a few teaspoons remain. 10 min.

take away pan from heat and whisk into cream. then whisk in butter. pour sauce thru fine mesh, remove solids, season sause with w/pepper & set aside....keep warm
